Raspberry and White Chocolate Blender Muffins

We have partnered with The MacPherson Diaries to deliver you a yummy new way to use your AwaRua Organics Milk Powder!! Jana has helped us create an easy Raspberry & White Chocolate Muffin recipe.She tweaked her super popular ‘Blender Muffin’ recipe and used our AwaRua Organic Whole Milk Powder in two ways. Mixed with water for the milk element of the recipe, and in powder form as a substitute for some of the sugar. Using our milk powder helped give the muffins a creamy depth so give this easy low sugar recipe a try and show us how you get on!!

INGREDIENTS
2 very ripe bananas
¼ cup milk made from AwaRua Organics Full Cream Milk Powder
¼ cup oil
1 egg
1 teaspoon vanilla
1 cup self raising flour
2 tablespoons sugar
2 tablespoons AwaRua Organics Full Cream Milk Powder
1 cup raspberries (frozen or fresh)
½ cup white chocolate chips

METHOD
Preheat oven to 180 fan bake
Grease a 12 capacity muffin tin, or use paper patty cups.
In a blender jug, add banana, milk, oil, egg & vanilla
Blend and pour into a medium sized bowl
Place a sieve over the bowl and sift in the flour
Without stirring, add the sugar & choc chips, reserving a few choc chips for the top of the muffins
Mix together gently, after a couple of mixes add the raspberries, again saving 12 raspberries for the top of the muffins, don’t over mix the batter.
Spoon into muffin tins, top with reserved berries and choc chips
Cook for 16 – 20 min until cooked through and golden.
